Ingredients
For the Pork Roast
– 3–4 pounds boneless pork shoulder or pork loin roast
– 1 tablespoon olive oil
– 1 teaspoon salt
– ½ teaspoon black pepper
– 1 teaspoon paprika
– 1 teaspoon onion powder
– 1 large onion, sliced
For the Honey Garlic Sauce
– ½ cup honey
– ¼ cup low-sodium soy sauce
– 6 cloves garlic, minced
– ½ cup chicken broth
– 2 tablespoons ketchup
– 1 tablespoon apple cider vinegar
– 1 tablespoon Worcestershire sauce
– ½ teaspoon ground ginger
– ¼ teaspoon red pepper flakes, optional
For Thickening the Sauce
– 1½ tablespoons cornstarch
– 2 tablespoons cold water
– 1 tablespoon chopped fresh parsley, optional
Instructions
Step 1: Prepare the pork
Pat the pork roast dry with paper towels. Rub it with olive oil, salt, black pepper, paprika, and onion powder. This simple seasoning adds flavor before the roast enters the slow cooker.
Step 2: Arrange the slow cooker
Spread the sliced onion across the bottom of the slow cooker. Place the seasoned pork roast on top of the onions.
Step 3: Prepare the honey garlic sauce
In a medium bowl, whisk together the honey, soy sauce, minced garlic, chicken broth, ketchup, apple cider vinegar, Worcestershire sauce, ground ginger, and optional red pepper flakes.
Step 4: Add the sauce
Pour the honey garlic mixture over the pork, turning the roast gently to coat it. Cover the slow cooker with its lid.
Step 5: Slow-cook until tender
Cook on LOW for approximately 7–8 hours or on HIGH for 4–5 hours, adjusting as necessary for the cut and size of the roast.
Pork shoulder becomes especially tender when cooked until it can be pulled apart easily. Pork loin is leaner, so check it earlier to prevent it from drying out.
Step 6: Remove the pork
Transfer the cooked roast to a serving platter and cover loosely with foil while you prepare the sauce. If using pork shoulder, shred it with two forks if desired. Pork loin can be sliced into thick pieces.
Step 7: Thicken the honey garlic sauce
Pour the cooking liquid into a saucepan, if desired, and skim off excess fat. Bring it to a gentle simmer.
In a small bowl, whisk the cornstarch and cold water until smooth. Slowly stir the slurry into the simmering sauce and cook for 2–3 minutes, stirring until glossy and thickened.
Step 8: Coat the pork
Return the sliced or shredded pork to the sauce or spoon the glaze generously over the roast. Let it sit for a few minutes so the meat absorbs the flavorful sauce.
Step 9: Garnish and serve
Sprinkle with fresh parsley and serve warm with mashed potatoes, steamed rice, roasted vegetables, or dinner rolls. Drizzle extra honey garlic sauce over each serving.
