2 tbsp fresh dill, chopped
¼ cup shredded mozzarella
½ tsp garlic powder
½ tsp onion powder
¼ tsp black pepper
¼ tsp salt
1 tbsp olive oil or cooking spray
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 6-cup jumbo muffin pan or 10–12 regular muffin cups.
Add the eggs and cottage cheese to a blender and blend until smooth and creamy.
Pour the egg mixture into a bowl and stir in the spinach, feta, green onions, dill, mozzarella, garlic powder, onion powder, black pepper, and salt.
Divide the mixture evenly among the muffin cups, filling each about ¾ full.
Bake for 20–25 minutes, or until the eggs are puffed, golden around the edges, and completely set in the center.
Allow them to cool for 5 minutes before removing from the pan.
Garnish with a little extra fresh dill or green onion and serve warm.
